Everything about this restaurant exudes a warm, Japanese-style country atmosphere. Tang Ben Guo bases itself on concept from the Xian Ken Hot Spring's long history of soup, offering a one-person, one-pot restaurant policy. The broth is cooked for hours with the bones of black-haired pigs, together with more than 10 different herbs, which help bring out the sweetness of the abundant, top-quality, fresh ingredients offered here. This includes the exclusive use of Taiwanese black-haired pigs, plus sea cucumbers, squid, fish jaws, squid balls, cheese balls, and basil-flavored squid made with the restaurant's private recipe. All ingredients are only prepared and served after diners place their orders, helping ensure freshness. A special-recipe barbecue sauce that combines Japanese and SangTou's old traditional sauces is another important key to tasty hot pots here. Sangtou is a city on the east coast of China. Lunch is NT$250, dinner is NT$299 and a late-night snack buffet costs only NT$250. --By Tammy Huang, translated by Sho Huang
