Long Yan Ju offers a variety of healthy cuisine mainly prepared with Chinese medicinal ingredients. The menu has an array of chicken cuisine made in different ways. This includes Ginseng Chicken, Black-Skinned Chicken and Fleece Flower Root, Chicken with Stuffed Preserved Vegetables in Milk Broth, and Wild Grape Chicken. Dish portion sizes and prices (NT$120) make them ideal and convenient for individual diners. If you don't feel like eating with a big group of people, this place is perfect for a bit of quiet time with some good food. Other dishes here that go well with the healthy entrees are Thin Noodles with Sesame Oil, Minced Chicken and Rice, homemade braised variety dishes, and the tasty appetizers. --By Vincent Huang, translated by Ann Lee

A. All dishes here are made-to-order and guests can select a type of chicken for their choice of chicken cuisine. The wild mountain chicken (NT$120), indigenous chicken (NT$150) and black-skinned chicken (NT$170) all have distinct textures. The hard-boiled chicken is sweeter and chewier, and you will find that the broth which goes with it is slightly milder with less medicinal flavor. Because the restaurant chooses male chickens with less body fat, the chicken soup remains sweet and flavorful even after being chilled or left at room temperature.

B. Besides Long Yan Ju's healthy chicken cuisine, its variety of homemade braised dishes (NT$30) are also worth trying. The fragrant Braised Bean Curd and Eggs is first braised with the restaurant's exclusive spices, then chilled in the freezer, giving it a naturally delectable flavor.
