Mr. Chiang is the third-generation owner of this restaurant. After his successful chain restaurant Ho Sushi, he decided to open this new place. Consequently, customers can savor the true, rich flavors of Japanese-style cuisine here. All sushi dishes are prepared with naturally-fermented vinegar delivered from southern Taiwan. Its flavor is mild with a naturally sweet aftertaste. This is combined with a specialty sushi-making rice imported from Japan that is sticky and chewy but still maintains a good consistency. A entree with eight pieces of sushi and starts at NT$60, and soups and appetizers start from NT$20. --By Niang Chen, translated by Ann Lee
A. The Signature Sushi Plate (NT$250/13 pcs) includes a variety of fresh, individually-wrapped ingredients--sailfish, tuna, salmon, calamari, salmon roe and prawn. All the fish used to create this wonderful cuisine are imported from Japan, ensuring excellent quality and textures. The sweet calamari and colorful salmon roe sushi are among the most popular choices at the restaurant.
B. The Grilled Sushi Combo (NT$580/10 pcs) come with five types of sushi: halibut, salmon, beef, eel, and scallops. Each is placed on the grill and brushed with a special sauce made from soy sauce, sugar and vinegar, before being cooked at high heat with a blowtorch. The beef becomes tender, and the natural oils from the fish exude a tempting flavor certainly worth trying! The restaurant also offers a good selection of appetizers like the Mashed Potato Salad (NT$30). Try a plate of savory shrimp roe with this dish, and tantalize your palate with the smooth textures of both items.
