Owners Paul and Alex have two Taipei restaurants, now joined by this mid-priced Taichung eatery near to Tunghai Night Market. Their "change first, ask questions later" policy aims to satisfy customers: If a diner doesn't like a dish's flavor, they replace it. Order options include regular or extra-large sizes, and fettuccine or spaghetti. The menu includes soups, salads, appetizers, desserts, a huge variety of traditional pasta entrees (served with a drink) and the chef's own recipes (NT$110-230). --By Javi Siles, translated by Angel Pu

Pictured (clockwise from top left, in extra-large sizes) are the Chicken Quesadilla (NT$200), Chili and Dried Fish Spaghetti, Shrimps and Scallops Fettuccine (NT$190), Mustard Chicken Spaghetti with Green Peas (NT$160), Fettuccine with Bacon and Spicy Tomato Sauce (NT$150), Spaghetti Sauteed with Seasonal Vegetables (NT$140) and, in the middle, Mozzarella Cheese and Fresh Tomato in Pesto (NT$180).

B. The Shrimps and Scallops Fettuccine includes plump shrimp and a smooth, creamy sauce that goes very well with fettuccine. The Cosmopolitan (NT$190; pictured, back) is one of the many drink options here.
