At the end of last year, Gina Chen opened this elegant French restaurant, which has adapted its cuisine to Taiwanese palates. "Sante" is a reference to three different things--the chef's name, the "cheers"-like drinking salute in French, and "health" in French as well. With over 10 years of experience at French restaurants, the owners make sure that their customers receive the best service, the best food and the best wine--all part of their effort to develop a friendly long-term relationship with patrons. Their ultimate goal is to make the customers feel like they're enjoying delicious French cuisine at their own homes. --By Javi Siles, translated by Angel Pu
