There's nothing "simple" about this exquisite fine-dining spot, opened by L'affection French restaurant chef/owner Chris Liu and hotel-industry veteran Han Yang. Liu, who previously worked as The Landis Hotel executive chef, at the Taipei Grand Hyatt and in France and Napa Valley, works with his 10 chefs to prepare a delicious variety of a la carte Continental dishes for affordable prices. Dozens of Old World wines are also available. --By Douglas Habecker, translated by Chloe Wei

A. A sampling from the lunch/dinner menu includes a wonderfully-savory "Egg Cocotte" Baked Farm Eggs in Cocotte Pan (NT$360), made with Morchella mushrooms, tomatoes, garlic, bacon, and white truffle and red-wine sauces; the Spanish-style Seared Squid Stuffed with Seafood (NT$450); and "Bouillabaisse" Southern French Seafood Soup (NT$320).

B. The NT$480 High Tea offers selections from three categories such as Savoury Pastries, plus scones and coffee/tea choices.

Simply CafeC. Simply's romantic-feeling, two-floor villa has indoor/outdoor seating for 78, including a large upstairs VIP room and outdoor balcony for special events.
