The youthful owners--National Pingtung University of Science and Technology graduates Tsai Fu-liang and his wife Chang Yu-hsuan--have devoting their lives to researching the vinegar-drinking culture, seeking ingredients to brew vinegar, researching bacteria species, and following traditional fermenting steps to produce the best-flavored vinegars. Nine different vinegar series have been developed to promote vinegar drinking and healthy concepts. --By Uvia Chang, translated by Erica Lin
