The creative Taiwanese dishes here utilize local ingredients, including Penghu seaweed, Pingtung cherry shrimp and Taichung "guomao" ferns, plus traditional Taiwanese seasonings such as green onions, ginger, scallions, soy sauce and black vinegar. A la carte dishes are NT$120-600; rice is NT$20/person with a dessert; table sets start at NT$3,500/table.

A: This Fengyuan restaurant boasts a stylish interior.

B: Bitter Melon with Pork Intestine (NT$380), featuring tender bitter melon and savoury pork intestine, is a mild combination of salty and sweet flavors, and takes three days to make. Guomao fern is a local vegetable great for salads, and the refreshing Guomao Fern Salad (NT$170) is seasoned with green onions, ginger, scallions, sugar and vinegar.

C: Cherry Shrimp Fried Rice (NT$250) contains seaweed from Penghu, clams, shredded ginger and chopped cherry shrimp. Pork Spareribs (NT$280) is a stir-fried dish made with deep-fried pork spareribs, onions, black vinegar and sugar. Its appetizing, sweet-and-salty flavor goes perfectly with beer.

This hearty, traditional northern Chinese hotpot contains various sheep cuts. Feng Guan's mutton is sourced from a Dadu Mountain farm and is delicious poached, stewed, stir-fried or grilled. Mutton Fat Chinese Angel Hair Noodles and Mutton Fat Rice start from NT$20 while a Full Mutton Set is NT$2,700-5,500.

A: Stewed Mutton Tail (NT$200) is tasty and very chewy as it's a body part that sheep use a lot. It's even better with a seasoning mix of aniseed, cinnamon and cardamom.

B: The savory Steamed Fatty Mutton (NT$250) is seasoned with white sesame oil, salt, chopped green onions and garlic, and the chewy mutton skin tastes even better than the meat. Grilled Mutton Skewer (NT$50/skewer) is seasoned with cumin and onions, and is perfect with beer.

C: Mutton Stock (NT$300-500), made with mutton bones and offal plus white radishes, is good for cooking meat or vegetables, particularly mutton (NT$250) and veggies like fennel and cabbage (both NT$50).

Wai Huan 309 Cantonese Cuisine

Wai Huan 309's wooden interior, resembling a Hong Kong-style teahouse, offers all kinds of Cantonese stir-fried dishes and dim sum and is always packed with diners.

A: This very attractive Cantonese eatery is located on FengYuan Boulevard.

B: The labor-intensive, limited-quantity Roasted Crispy Chicken (NT$320/half-chicken) is crispy outside and tender inside, and still delicious after cooling off. Pi Pa Fei Cui Yu ("Pipa Emerald Jade") (NT$280), containing minced tofu, Jinhua ham, cured meat and shrimp, is deep-fried and shaped into bite-sized pieces. Resembling small "pipas", or Chinese lutes, these are then placed on broccoli (the emerald) and drizzled with a thickened stock. The tender, savory Stir-Fried Beef with Olives (NT$260) features a sweet-and-salty Hong Kong olive paste that's fairly rare in Taiwan. Salty Fish and Chicken Dice Fried Rice is NT$180.

C: Authentic dim sum includes Prawn Dumplings (NT$98), Sesame Shrimp (NT$98), Sesame Balls with Red Bean Mash (NT$68), and Steamed Sui-Mai Dumplings with Crab Roe (NT$88).

Yi E Shi Goose Restaurant

If you're looking for some dining nostalgia, Yi E Shi serves filling, elaborately-made Hakka dishes (NT$80-350) and table set meals (NT$2,000).

A: Traditional Hakka home dining rooms are always decorated with flowery, bright-red fabric, while a big round table is ideal for a good meal with family and friends.

B: House Goose Meat (NT$280) takes about 30 minutes to poach and is only seasoned with salt and rice wine. After it's sliced and drizzled with soup stock, this authentic Hakka home dish for guests is ready.

C: Salty Pork with Pickles (NT$250), Pork Knuckles (NT$250) and Sweet and Sour Fish (NT$250) are pictured with another classic Hakka dish, Stir-Fried Large Intestines with Shredded Ginger and Bamboo Shoots (NT$150). Cold Stirred Guomao Fern (NT$80) is a savory dish with garlic and fried green onions with goose fat. Bamboo Shoots Soup (NT$150) contains sun-dried Hakka-style pickled vegetables and is perfect for winter dining.
