Sorrentina Pasta

Sorrentina Pasta

By Courtney Donovan Smith

Palio Pizza Italian RestaurantPalio Pizza Italian Restaurant's FuKe Road branch mostly uses a variety of self-cultivated herbs such as basil, thyme, rosemary and sesame plus other carefully-selected ingredients to create authenticic Italian dishes. Besides natural, healthy, flavor-filled pizza and pasta entrees, the restaurant also provides a bright and spacious dining ambiance.

Sorrentina pasta topping has ingredients similar to a Margarita pizza, including tomatoes, basil and mozzarella, making it a simple, classic Italian dish that you can cook at home.

Ingredients:
Penne, pasta, or gnocchi; 2 fresh tomatoes (for two-person serving); 100g mozzarella; a few sprigs of basil; garlic and onions

Seasonings:
Black pepper, salt, olive oil

Preparation:
1. Boil penne (or other pasta) for about 6 minutes. Remove, drain and mix with olive oil.
2. Dice and fry tomatoes until they are soft. Add a little water and basil, and cook until it thickens to a sauce-like consistency.
3. Add olive oil to pan and stir-fry garlic and onion slices. And then add the tomato sauce from Step 2 and continue to cook until the sauce and other ingredients are completely mixed. Add the penne or pasta from Step 1 and keep cooking, adding some water or broth, plus a bit of shredded basil, seasoning with black pepper and salt, until the pasta has absorbed the sauce. Then add mozzarella; when it's semi-melted, this dish is ready.
4. Transfer to a dish and garnish with some basil before serving
