Marinated dishes are a yummy appetizer choice for many diners. In addition to soy sauce and salt marinades, there is a "white marinade sauce", also attractive to the eyes because of its transparent color. Unlike soy sauce, this marinade does not darken foods because it uses sea salt and Chinese herbs. It also both preserves and enhances the original flavors of food. In addition to the white marinade dishes, long-time diners come all the way to this shop to purchase their sour cabbage hot pot soup base and specialty sauces such as the Beijing-style meat sauce and Shandong vintage vinegar to take home and enjoy. --By Sharon Chang, translated by S. Ying

A. Beijing meat sauce and Shandong vintage vinegar are made with the store's secret recipe.

B. The key advantages of using a "white marinade” is enhancing flavors while maintaining original colors so that it doesn't look marinated.

C. Featuring naturally fermented cabbage, Chinese-style kimchi isn't sour and has a smooth flavor.
