Sommelier Morris Tao has moved past his original focus on selling wines and now serves dinner entrees paired with red or white wines as part of menus created from seasonal ingredients with Executive Chef Lin Li-Han. Wines can be ordered by the glass or bottle and can also be taken home for enjoyment. --By Ruby Wu, translated by S. Ying

A. American Short-Rib with Risotto (NT$380) uses antibiotic-free Angus beef and comes with mushrooms, vegetables and barley instead of white rice, making it a healthy entree.

B. The Charcuterie Plate (NT$580) takes a lot of effort to put together and is perfect with wine. It includes prime varied pork cuts like pork ears, head, knuckles, joints, pork terrine and pork pate, served with tomatoes, zucchini, beet roots and sweet potato chips on the side.

C. New menu addition Salmon Tartare (NT$280) is a refreshing summer option.
