This reasonably-priced shop serves hakata-style ramen,known for its soup, and the owner adjusts the seasoning so it's less salty than at traditional ramen places while keeping the rich, thick, white soup base. Soup is brewed for two days with seven different parts of the chicken and pork, including chicken breast, feet and thigh, plus pork bone which boosts the collagen and calcium in the soup. This noodle soup pairs well with toppings of chopped scallions, shredded black fungus and bamboo. There are over 20 different soup flavors including cheese, miso minced meat and spicy, with appetizers including black beans, kimchi, and scallop lips. --By Uvia Chang, translated by Eva Liao

A. Shouyu Pork Cartilage Ramen (NT$158) is made of black fatty pork marinated for 12 hours and stewed at low temperature until it is tender and the cartilage is crunchy, but not tough.

B. Japanese Pork Chop Ramen (NT$228). The pork chop is marinated with a special Taiwanese sauce and then fried. Customers opt for one or all three dressing varieties--tartar sauce, sesame sauce, and Japanese-style dressing.

C. The Japanese-style interior is simply decorated red.
