This grand, luxuriously-decorated Cantonese dim sum restaurant uses local Taiwan ingredients such as Checheng duck eggs, Hualien chili peppers and Taitung Leshang coffee beans personally selected by the executive chef. A. Executive Chef Chi Yi-Ming uses literary concepts to promote his culinary art, labeling new dishes like artworks--such as the "Fashion Mushroom Dumpling Quicksand" dessert, made with molecular cuisine techniques.
B. Spicy Pickled Roast Duck Sushi (8 pieces, NT$220) features shrimp roe-filled roast duck skin. Prawn Balls with Blueberry Yogurt (NT$450)--tender prawn balls paired with special blueberry yogurt sauce--are extremely tasty.
C. Molecular Smoked Roast Pork (NT$360) features roast pork layered on top of greens with a light sauce. This entree is smoked with green tea wood tinder right before serving to give it the light fragrance of tea, vegetables, passion fruit and yams.
