Louisamanda Cafe will be serving this colorful salad to welcome in the new year during this time of festivities and joyous celebrations. Master Chef Liu specializes in French cuisine and uses simple mixtures of fruit and vegetables that complement each other to create dishes that are both healthy and delicious.
-1 Red bell pepper
-1 Yellow bell pepper
-Some mixed nuts
-Maple syrup 2 tbsp.
-Honey 1 tbsp.
-Some pepper & natural sea salt
1. Wash and dry each bell pepper, place in a preheated oven (about 220 degrees) and bake for about 20 minutes until the skin appears charred on the outside. Remove from oven and allow to stand for about 10 minutes; then dice after removing the skin, stem and seeds.
2. Cube apple, persimmon and kiwifruit after peeling off the skins. Mix with bell peppers.
3. Dice avocado and mash with honey, maple syrup and black peppers to create a thick sauce.
4. Add the sauce to the mixed fruit and sprinkle red pomegranates and nuts on top to complete this healthy fresh fruit salad with avocado maple syrup.
