Constructed out of shipping containers, this bike-themed pop-up cafe is a minimalist hangout for the trendy caffeine addict and cycling enthusiast--with a conscience. Owner and co-founder Wax Tsai undertook this personal project with a team of close friends, who provided their varied architectural and design expertise to create an innovative cafe (with indoor/outdoor seating) combining health and wellness with creativity and service. The pop-up will run until March, 2017 with proceeds going to an Yilan-based cycling team of underprivileged girls, with the ultimate goal of sending them to Switzerland's World Cycling Centre to train for the 2020 Tokyo Olympics. In addition to single-origin hand drip coffees, there are Australian-inspired specialty drinks like the Tim Tam Chocolate and Dirty Chai lattes (both NT$150), complete with original latte art upon request. Clean, healthy dining options include the Build-Your-Own Bruschetta (NT$220), Chicken Avocado Sandwich (NT$200), and gluten-free cheesecakes sourced from 1% Bakery (NT$90-140). Come with a bike or cycling attire and receive a 10% discount. --By Karen Sims, translated by Anna Yang
