In times past, "papaya milk" was often used as a general term for "light snack" in Taiwan, and today's cafes serving freshly-made juices and light sandwiches have their origins in early papaya milk vendors. Beginning in 1978 as a papaya milk vendor outside Yuanlin Railway Station, PURE 30 has reopened in Taichung as a cafe serving the same vintage recipes, but with a modern ambiance that includes luminous circular sofas which encourage lively customer interactions. Passed down over four decades, PURE 30's simple dishes are made with local ingredients, including Tainung Greenhouse No. 2 papayas, milk from the famous Laodad Dairy in southern Taiwan, and pork from traditional markets. Menu items include Black Tea, Tea with Milk, Papaya Milk, Handmade Almond Milk, toast, and handmade burgers, with prices ranging from NT$40 to NT$95. The sweet, traditional Papaya Milk here also reminds new customers of the good old days. --By Niang Chen, translated by Anna Yang
