Natseme offers Japanese cuisine that is as fresh and light as "summer", which is what the restaurant's name means. Natseme has a sushi bar and private seating area, with wood and mat decor that is characteristically Japanese. Diners can sip complimentary Japanese tea while perusing the menu of both traditional dishes, such as Fish Miso Soup (NT$120), Vegetable Tempura (NT$280) and Shrimp Tempura (price varies), and innovative creations like Baked Oven Lobster With Sea Urchin Sauce (NT$520) and Whiskered Velvet Shrimp Baked on Hot Pebbles (NT$480). --By Dipal Khatri, translated by Ann Lee, photos by Andy Lin

A. Taiwanese chef Aran displays one of his sashimi creations. Presentation is very important to Aran, who decorates dishes with plants, fish and vegetables cut into fancy shapes and flowers.
