        Chiayi residents hankering for good Korean food are heading to Uncle Sam's Korean Restaurant, a new establishment owned by a local man married to a South Korean woman. It's popular with Korean engineers working on the high-speed railway project, and if native Koreans go there, you know the food must be authentic. Also, Western expats who've spent time in South Korea say this place is the real thing. The kimchi is savory and spicy; the soups are delicious; and the various fish, pork and chicken dishes are served Korean-style. Prices are reasonable, ranging from NT$80 for soup to NT$250 for a complete meal. Uncle Sam's is open for lunch and dinner seven days a week, and is certainly one of very few places--perhaps the only place--in Chiayi where bona fide Korean cuisine can be found. --By Dan Bloom
