VS Noodles

Second-generation owner Yang Tze-teh was head of an R&D department in the Hsinchu Science Park but gave that up to devote himself to this family noodle shop, which originated in Miaoli County’s Yuanli township. He has focused on enhancing the quality of his noodles and upon entering customers can see the professional noodle-making station through a glass wall. Noodles are made here with a soft-water filtering process and UVC-ray anti-bacterial equipment, and are SGS-certified. Six filling cold noodle options (NT$45-65) are available, served with richly-flavored sauces, including Sesame Sauce, Pickled Vegetables, Nuts with Yogurt, and Sous Vide Chicken Breast. Deep-Fried Scallions with Noodles (NT$45) is made with pork fat and red scallion sauce. Fragrant, tender and juicy Sous Vide Beef Ribs with Noodles/Rice (NT$320) features U.S. Prime beef marinated in a specialty sauce, taken through the sous vide process for 22 hours and then grilled.
