Yummy Goose

This shop’s youthful owner used to work in the tech industry but, after meeting a goose breeder from his home county in Yunlin, decided to open a restaurant serving delicious fresh, water-boiled goose. All his geese are sourced from Yunlin and sent over when they’re 3-4 months old (about 3.5 kilograms). Based on the advice of an experienced older chef, he uses medium-to-high heat to boil and simmer the birds and a sharp knife to evenly slice the goose meat (NT$200-1,500/based on plate size), which is topped with shredded ginger before serving. The final result is succulent and tender. The delicious, but inexpensive, Goose Fat Noodles (NT$40) is served with deep-fried scallions. Other traditional, nostalgically-flavored a la carte goose dishes include Stir-Fried Goose Intestines with Celery, Pan-Fried Goose Egg with Basil (NT$100-120); Sauteed Goose Wings; Goose Fat with Sponge Gourd and Clams; and Goose Fat with Squid (NT$180-380).
