Touting itself as the "hottest wings in Taiwan", Hot Wing Republic is the brainchild of Mr. Jang--originally from Guilin, China--who moved to this city with his Taichung wife after about a dozen years in Toronto and stints in China and Taiwan with high-tech firms like TSMC. Perhaps inspired by his original profession as a fire-protection engineer, Jang decided to create some heat with his American-style buffalo wings, which get their spiciness from a homemade Tabasco-inspired recipe sauce. The wings (NT$15 each) are generously slathered with this sauce (a disposable plastic glove is provided) and come in Mild Hot, Medium Hot and Suicidal Hot varieties, or a Sizzling Hot & Numb style that uses a different Sichuan-style red pepper. To put the flames out, have a cold, slightly-tart Roselle Tea (NT$20). A non-spicy food option is his "Central American Pie" (NT$30-40), actually a Jamaican Patty--a yellow pastry filled with spices, meat and other ingredients. Flavors include Beef, Pork, Curry Chicken, and Cheese Bacon. Five combos (NT$40-99) offer all of the above in different mixes.
