This restaurant's specialty is pizzas made in its brick wood-burning oven. The entire traditional Napoli pizza-making process is done in an open kitchen and can be seen by the customers. The oven is heated up to 400-500 degrees Celsius with longan wood or charcoal. The chef spreads a layer of tomato or basil sauce on the rolled thin dough before adding various ingredients and sprinkling it with plenty of mozzarella cheese. Pizza flavors include Hawaiian, Vegetarian, Salami and Meat (seafood/chicken/bacon). After preparation, the chef puts the pizza onto a long shovel and sticks it into the brick oven. While it's inside, he keeps turning the shovel to ensure the pizza gets evenly baked, and the result is crispy, delicious hand-made pizza. The restaurant also serves all kinds of spaghetti, waffles, salads, German Eisbein pickled ham hocks, sausages, sirloin steaks and roasted spring chicken. --By Uvia Chang, translated by Angel Pu
