After running Taipei's high-end Black Bull Farm restaurant, Newcastle, England native Bill Potts and his wife Carol have relocated to Taichung and opened this beautifully-decorated, villa-like "farm-to-fork" bistro that only uses reputable air-shipped (non-frozen) organic beef and seafood that they import themselves, plus organic Taiwanese pork. Their imports--including beef cuts, whiskies, wines and wild Scottish salmon--are also retailed here. Bill's gourmet, home-style cooking include Famous Beef Wellington (NT$4,500 for 4-5 diners; order 6 hours in advance) made from a Gordon Ramsay recipe; Traditional Roast Top Rib, Yorkshire Puddings, Roast Potatoes and Seasonal Vegetables (NT$980); "surf & turf", soft-shell crab and steak burgers (NT$260-410); and various steaks like the Australian Naturally Aged Rib Eye (8 oz. NT$950, 12 oz. NT$1,500) cooked with fine sea salt and olive oil and finished with butter, thyme and rosemary.
