Every time I walk by this small noodle shop in the Tunghai commercial district, I enjoy the aroma of pork noodles. This fragrance helps draw customers inside for a taste of its so-called energy noodles. These curvy noodles are all handmade and, before being dumped into a boiling cooking pot, are hand-kneaded and massaged to “awaken” them. After cooking, the final product has a unique, characteristic springy and chewy texture. The many noodle dishes here each also have a unique flavor, being made with a pork bone broth base mixed with curry, tomato or miso. For example, Spicy Tomato Pork Rib Noodles (NT$140), which can be enjoyed with or without soup, is stewed with big pork ribs until it’s very flavorful and served with some homemade chili sauce, green lettuce, corn, kelp and whole tomatoes–cooked until soft and helping to reduce the soup’s oiliness. Other chewy noodle dishes include Thai-Style Tom Yum Pork Ribs (NT$150), Cheese with Pork Ribs (NT$150) and Mixed Seafood, and there are side dishes and extras like Three-Flavor Eggs; Dry Tofu with Sauce; Garlic Tofu, and giant-sized noodles.
