The name of this swanky-looking hot pot restaurant (adjacent to Karuizawa massage center and Texas Roadhouse) refers to its most unique selling point—fresh, 18-degree, non-frozen beef, delivered daily from the Tainan farm where it is raised, ensuring outstanding texture, juiciness and flavor. 
Prior to Win 18’s opening a couple years ago, this delicacy was largely confined to Tainan street vendors. Now diners can savor it and other hot pot delights in an attractive, two-floor contemporary Chinese setting, creating by an internationally-acclaimed designer with glass walls, high ceilings, metal lattice work and lots of wood.
Chef Yi-Dong’s special, sushi-like technique for hand-slicing this room-temperature beef—learned from Tainan Chef A-Yu—means that diners also get printed instructions (and staff demos) for three options to cook it to a perfect pinkness in a mere three seconds: ladling hotpot broth onto meat in a separate bowl, or using tongs or a ladle to briefly swipe or dip it through the hotpot broth.
While there are two and six person weekday dinner sets (NT$998, NT$2,808 +10%) and two and four person holiday sets, most experienced diners enjoy ordering a la carte, starting with the hotpot broth (NT$200), served in decorated pots created by a famed local metalwork artist.  Starting in March, divided two-flavor pots and new broths are available. Besides, the Original flavor, brewed 6-10 hours with beef, fruit, veggies and secret ingredients, there are Sesame Oil, Rice Wine, spicy Mala, and Japanese-style Kombu options. 
Besides the above-noted Top Class Non-Frozen Fresh Beef (NT$480/order), new March meat options include pork, chicken, duck and imported beef. There are also pre-cooked beef plates like Kimchi Beef (NT$300) or Sesame Oil Beef. A wide range of other hotpot ingredients and sides include various mushrooms (NT$50-60), dumplings, vegetables and tofu. A respectable list of beer, sake, whisky, wine and other drinks is also available. It’s worth noting that English and Japanese menus make ordering easier for foreigners.
